Tasting note
Delicate and long-lasting, salmon-pink in color, which takes on copper tones over time. Rose water and red berry aromas. Elegant and full-bodied on the palate, with a well-considered acidity, which invigorates the fruit and underlines the aromas.
Vinification
The small Pinot Noir boxes are left in a cold room at 4°C for 24-36 hours, cooling the grapes to 10°C to improve the extraction of varietal aromas. The chilled grapes are then mashed in the press for 8-12 hours to extract the desired color pigments and aroma precursors. The must is then settled by gravity and fermented at 15-17°C, partly in stainless steel tanks and partly in oak barrels, where it undergoes malolactic fermentation.
