Tasting note
Incredibly complex and multi-layered on the nose with notes of aged citrus fruit, roasted almonds, brioche, white flowers, honey, vanilla and a touch of caramel. Creamy, finely sparkling and elegant on the palate, with enormous depth, powerful structure, very well-integrated acidity and a long, mineral, salty finish. A sparkling wine of great finesse that competes with the best champagnes.
Culinary recommendation
Ideal with oysters, scallops, fine fish, truffle dishes, grilled veal fillet, seafood risotto, or even as a delicious aperitif for special moments. A great companion for festive menus.
Vinification
Only produced in exceptional vintages. Spontaneous fermentation in small barriques, then at least 8 years of bottle fermentation on the yeast (Méthode traditionnelle), no dosage — i.e. Pas Dosé/Brut Nature. Absolutely precise cellar work and uncompromising selection.
