Tasting note
Intense straw yellow with light golden reflections and a fine and persistent perlage. Complex and sophisticated bouquet with notes of berries such as blackcurrants and raspberries, accompanied by notes of bread crust, yeast and delicate toasty nuances. Dry, fresh and well-structured, with an elegant minerality and a pleasant acidity that perfectly balances the body of the wine. On the palate, there are notes of quince, citrus and roasted almonds, with a persistent and slightly savory aftertaste.
Culinary recommendation
Ideal with fish, shellfish and seafood dishes, and also excellent with white meat, fish tartare or fresh and soft cheeses. Also perfect as a sophisticated aperitif.
Vinification
Manual harvesting takes place early in the morning to preserve the freshness of the fruit. The vinification is carried out using the classic method with a second fermentation in the bottle and a long refinement on the yeasts for at least 48 months, which gives the wine complexity and finesse.
