The Manetti family's Azienda Fontodi, built in the most beautiful Tuscan style with modern accents, is hard to beat when it comes to perfection. In addition to the use of fine materials and formal beauty, the guiding principle behind the design was the careful processing of the grapes through to the finished wine. All transportation of grapes and wine takes place in free fall, i.e. without pumping. The grapes arrive at the very top, and one level down, there are modern fermentation containers in which the mash ferments at a controlled temperature. Even further down is the beautiful barriques cellar, nestled deep into the earth, where the wine ripens with the necessary peace and quiet. The single-varietal Sangiovese Flaccianello has been one of the elite plants in Tuscany for decades. For this purpose, grapes are selected from the best locations, mashed in steel tanks for three weeks and fermented with wild yeasts. The aging takes place in new barriques (Allier, Tronçais) and lasts at least 18 months. It contributes to the aromatic diversity and concentration that shape the overall picture without appearing lush or heavy.
