The high-altitude vineyards on the slopes of Mount Etna and the volcanic soils offer a perfect balance between nutrients and sparseness. The altitude at an altitude of 800 m ensures cool nights that counteract the hot days of the Sicilian summer. This results in an exciting balance of freshness and density. The nose is inviting, with notes of orange, acacia and white flowers. This is accompanied by a structured palate, which is characterized by a salty, mineral acidity. This wine goes perfectly with local cuisine, fish, hard cheeses such as pecorino, or North African dishes.
