About the wine
Sunny landscapes of Languedoc-Roussillon give us these grapes, from which the winemaker from the French winery La Cendrillon conjures up this red wine with refinement and experience. If we can offer something special for Christmas 2019, it is this dominant Shiraz 2016 — Essentielle AOP Corbières BIO. Flaschenpöstler tip: Pair this Shiraz with venison or roasted vegetables.

Tasting note
With a full-bodied structure, this wine unfolds a bouquet with red and dark berries, which is finely underlined with a little pepper and a touch of truffle. On the palate, the wine has a full-bodied structure, which is smooth with silky and beautifully integrated tannins.

Vinification
The various grape varieties are harvested at optimal ripeness and picked and destemmed before mashing. The mash is recirculated daily before and at the start of alcoholic fermentation. During fermentation, gentle extraction is achieved by manually dipping the pomace hat at a moderate temperature (22°). After 15 days of fermentation, the mash is removed from the vats and passed into the press using gravity. The aging takes place in tanks for one year. Yield: 30hl/ha
