Tasting note
The grapes for this pure Primitivo come from vines that are around 18 years old. After alcoholic fermentation in stainless steel tanks, it is aged for nine months in barriques. Expansive bouquet of dark berries, plums and cherry juice, underlined with notes of dark chocolate, the finest vanillin and spicy notes. Full-bodied, soft palate, with juicy, ripe fruit and velvety tannins.
Culinary recommendation
Flaschenpost team recommends this ERA Primitivo Salento IGP to accompany Brasato, spicy hard cheese and risotto.
Vinification
A few words about vinification: The vines for this Primitivo were planted in 1990 in Manduria (Taranto) on southeast-facing slopes with very calcareous soil. After manual harvesting and renewed grape triage in the cellar, the grapes are destemmed and slightly crushed. Fermentation takes place in stainless steel tanks at controlled temperatures. After spontaneous malolactic fermentation, the wine matures in barriques for about 9 months before maturing in the bottle for another few months.
