About the wine
Located on the beautiful south bank of the Danube in Wachau, vineyards are cultivated in the best vineyards around Mautern. A mix of young and old vines, together with the hard work of the Eder family, guarantee wines that stand for naturalness, digestibility and drinking pleasure year after year. Manual harvesting, which is carried out as late as possible and in several rounds, is just as natural as giving the wine enough time to develop. Good things just take time!

Tasting note
Spicy nose, dense, complex scent of stone fruit, ripe apple and white pepper. Juicy on the palate, with a mild acid structure, extract melt, mineral-salty notes and a palate filling finish.

Fried fish, veal, Wiener schnitzel
Vinification
Manual harvest at 21.5°, gentle pressing, must clarification using gravity, temperature-controlled fermentation in stainless steel tanks, aging on fine yeast. The addition emerald has been used since 1986 and may only be used for the best and most valuable wines from the Wachau region, which only mature in the sunniest vineyards. They are named after the emerald lizards, which feel particularly at home in the Wachau vineyard terraces.
