Tasting note
The nose reveals complex aromas of yellow flowers, almonds, brioche and fine yeast notes. The mousse is very fine; on the palate, the breeze develops a lot of meltiness and a balanced balance.
Culinary recommendation
Goes well with fish — from grilled sea bream and trout to steamed zander or a fine fillet of monkfish.
Vinification
The grapes for this exceptional champagne come from the Brisefer vineyard. After harvesting, the grapes are aged on lees in 220l, 300l and 500l barrels before the second fermentation begins in the bottle. The dosage is very low at 0-2 g/l.
