Tasting note
An exhilarating blend of violets, crushed rose petals, tobacco leaves and pencil chips, interspersed with sweet blueberries and cassis. The palate embodies the essence of the variety: smooth and red-fruited, with a high-resolution mosaic of raspberry, pomegranate and cherry, followed by gentler maraschino and blackcurrant aromas. Everything surrounded by tannins from plum skin. As the temperature increases, notes of cedarwood, blueberries and roasted plums emerge, leading to a finish with a final burst of violets, tomato leaves and raspberry sorbet.
Culinary recommendation
It goes perfectly with any duck dish.
Vinification
Located on the cooler eastern slopes of Bottelary, this trellis vineyard was planted in 2004 with the CF1 clone of Cabernet Franc. On soils of decomposed granite and at an altitude of 225 meters above sea level, this low-yield vineyard produces smaller grapes that offer incredible concentration, structure and ripeness with lower sugar levels. The grapes were harvested by hand on March 17, 2022 at a ripeness level of 24.9° Oechsle. The grapes were destemmed and placed in tulip-shaped concrete fermenters by gravity, where the whole berries were soaked cold for three days before primary fermentation began. To achieve optimal extraction, the mash was pumped around up to three times a day, with fermentation temperatures peaking at 28°C. The spontaneous malolactic transformation took place during the 11-month aging in 1000-liter French oak barrels. The wine was only peeled once, two weeks before bottling.
