Tasting note
In the glass, this Cap Classique is youthful and radiant, with a brilliantly bright yellow colour and a fine greenish glow on the edge. A fine, persistent perlage forms an elegant mousse. On the nose, the wine is fresh and expressive, with aromas of white peach, pear, Granny Smith apple and lemon zest, complemented by fine notes of roasted nuts, brioche and subtle spiciness. On the palate, the wine appears precise and lively, with notes of grapefruit, lemon, peach and apple, carried by fine perlage and fresh acidity, which result in a long, juicy finish.
Culinary recommendation
Tempura prawns with citrus ginger dip The pearls and citrus notes create a nice balance.
Vinification
The grapes for this Prestige Cuvée Cap Classique come from three selected plots in Robertson with calcareous soils and from a single pinot noir plot in Durbanville on table mountain sandstone. Chardonnay clones CY277 and CY548 as well as Pinot Noir PN777 were used. All grapes were picked by hand and pressed separately as whole grapes, using only the cuvée fraction (first 400 l/ton) for the assemblage. 50% of the wine (Chardonnay content) fermented in neutral French oak barrels and Austrian foudres, the rest in stainless steel tanks. After four months of aging on fine yeast The components were assembled and filled on May 28, 2019. The wine was then aged on lees in the bottle for 5 years and 7 months before it was disgorged and released for the first time.
