About the wine

As a descendant of a family that has worked in winemaking since 1640, winemaker Claire Clavel uses all her strength every day to continue the story of several generations. Supported by her father Denis and a team of women and men who make up the wealth of their company, Claire manages - cultivates the 80 hectares of vines at her winery and is always on the lookout for even more charm, authenticity and passion. The production area covers 5 municipalities: S t Gervais, S t Michel d'Euzet, Carsan, Bagnols-sur-Cèze and St Nazaire. This diversity is a great advantage, as you can work on different terroirs and get wines of different character. The vineyards are mainly located in the municipality of St. Gervais and are characterized by south-facing slopes, soils of flying sand, clay and limestone, and a cooler and windier plateau. Domaine Clavel manages the vines sustainably and always pays attention to protecting the environment. Maintaining the ecological system in the vineyard is a daily challenge: Every intervention is carefully considered to limit the impact on the environment. Thorough knowledge of the soil, careful observation of weather conditions and constant self-reflection are the key elements of winemaking of the future. In line with these principles, Domaine Clavel has been working according to the Terra Vitis approach since 2010 to guarantee transparency, traceability and quality to its customers.

Tasting note
This wine has a lovely golden color with verbena shine. The nose shows all its complexity after ventilation, first you will find lily flower notes, then compote, apricot and citrus fruit, and at the end a mineral aftertaste. It is a strong and well-balanced wine with peach and pear aromas and a slight length.
Culinary recommendation
Goes well with exotic dishes such as roasted pork confit with lemon but also with scallops, foie gras or rabbit.
Vinification
De-stemmed and pressed in a fermentation barrel. The must is then settled at a low temperature for 48 hours before being pumped into oak barrels for fermentation. After primary fermentation, the aging process begins there, the wine is left on its yeast and mixed as needed.
