About the wine
Since 2014, the oenologist Silvia González-García has been working on realizing her dream of owning her own winery: the El Canto de la Alondra (The Song of the Lark). The chemistry doctoral student's intimate project produces barely more than 3,000 bottles a year. Silvia takes care of every detail, no matter how small. Yes, she even applies the labels herself by hand. In this way, she also attaches great importance to a personal relationship with her partners.

Tasting note
El Canto de la Alondra, an elegant lively wine, full of subtleties and surprises. Initially, it is characterized by a distinctly fruity and floral character, which gradually leads to more complex aromas, velvety, toasty and mineral aromas. A full-bodied wine with a delicate tannin that inspires. Only around 3000 bottles of this wine were bottled.
Culinary recommendation
It goes well with dark meat, cheese and game dishes
Vinification
Aged for 13 months in French and American oak barrels. The wine was not filtered, which can cause deposits to form over time.
