Tasting note
The glass shows a clear ruby red with sparkling reflections. The nose combines aromas of sour cherry, pomegranate, lava rock and Mediterranean herbs. On the palate, the wine appears lean and tense with precise acidity, fine tannin and salty minerality in a long aftertaste.
Culinary recommendation
Veal, truffles, risotto
Vinification
The grapes are picked by hand and selected for ripeness. After careful selection in the vineyard and in the cellar, spontaneous fermentation takes place with natural yeasts in steel or cement. It lasts about 15 days with gentle weaving of the pomace hat. The wine ages in large wooden barrels and some concrete for around 18 months.
