Tasting note
The secret of Tocai lies not only in reducing quantities, that would also be too little secret! It is rather the art that Nicola Manferrari has mastered like hardly anyone else, of harvesting these grapes at the right time, delaying the aging of the young wine with and on the lees for as long as possible, and carrying it out in certain proportions in small oak barrels. And all of this is achieved because he has selected the right plants about 20 years before the harvest and has carefully considered which soil they should be planted on - and because he has then practiced for a few years.

Die Vinifikation fand wie folgt statt: Das Geheimnis des Tocai liegt nicht nur in der Mengenreduktion Geheimnis! Es ist vielmehr die Kunst, die Nicola Manferrari wie kaum ein zweiter beherrscht, besonders diese Trauben im richtigen Zeitpunkt zu ernten, den Ausbau des jungen Weins möglichst lange mit und auf der Hefe hinauszuzögern, ihn in bestimmten Proportionen in kleinen Eichenfässern durchzuführen. Und das alles gelingt, weil er etwa 20 Jahre vor der Ernte die richtigen Pflanzen ausgewählt und sich gut überlegt hat, auf welchem Untergrund sie zu pflanzen seien - und weil er dann ein paar Jahre geübt hat.
