About the wine
With the dominant white wine 2017 — Chenin Blanc, you can offer your family and friends something very special. The winemaker from the South African winery Survivor Wines is absolutely proficient in his craft. Style and finesse are the characteristics of this white wine, which originates in the enchanting and sunny countryside of the Coastal Region. Tasting note
This vintage offers remarkable depth and vibrancy, revealing seductive aromas of ripe pear, honeydew melon and a hint of citrus blossom. The harmonious balance between juicy fruit and subtle oak wood influence underlines its complexity. On the palate, this medium-strength Chenin Blanc delights with a generous, juicy core that merges into a crunchy, persistent finish underlined by refreshing, sparkling acidity.
Culinary recommendation
Great with Thai green curry, fried chicken, creamy butternut squash, or a mild camembert.
Vinification
The grapes were harvested at 22 °C to 23.5 °C. The grapes were harvested early in the morning to ensure that the grapes arrived cool in the cellar and were immediately pressed. The flow and the light pressed juice were separated from the rest. 50% of the juice was fermented in stainless steel tanks. After inoculation, the fermentation temperature was kept at around 12° C. for three weeks. The remaining 50% of the Chenin Blanc was fermented wild in 400-liter French oak barrels (10% new, 30% 2nd, 40% 3rd and 20% 4th filling). The wine aged in barrels for eight months before being cut and bottled.
