About the wine
The winemaker from the South African winery Ridgeback absolutely masters his craft. Tasting note
Rich, forward-looking notes of pineapple and sweet orange blossom develop into a fresh, juicy central palace with a hint of lemon peel and white peach on the finish.
Culinary recommendation
Goes well with fish dishes such as tuna or salmon.
Vinification
South-east-northwest dryland 12-year-old bush vines grow in deep Oakleaf and Clovelly soils. The clusters were crushed without crushing, a whole raspberry component being retained for a pressure of approximately 70%. The juice was settled overnight with a pectalytic enzyme in a stainless steel tank and then the clear juice was added by gravity to a combination of 400, 300 and 225 liters of French, Hungarian and Romanian oak barrels. All barrels went through natural fermentation and were inoculated with a commercially available yeast strain to ensure fermentation until dry. For added complexity, a small amount (3%) of naturally sweet viognier was added to the mix. The wine was aged for 8 months in 13% new oak barrels and was regularly mouthfelt before developing a mouthfeel. The wine was then slightly filtered before bottling.
