Tasting note
A floral top note precedes pear, peach, lime and lemon, with just a hint of flint-like reduction in the background. On the palate, it shows great refinement, pure fruit, refreshing acidity and a salty finish. A wine of grace and elegance.
Culinary recommendation
Goes well with seafood such as oysters or grilled fish. It also develops its full potential with light starters, salads or goat cheese.
Vinification
The grapes come from old bush vines planted on weathered granite in the Joubertskloof area of Swartland. These east-facing, irrigated vineyards contribute to a favorably low pH value. The harvest was carried out in two rounds in February. After harvesting, the grapes were cooled to 10°C overnight and picked by hand the following day, followed by gentle whole grape pressing. Neither sulfur nor other additives were added to the must. Natural fermentation took place in 225 liter and 300 liter barrels, followed by natural biological acid degradation. It was only then that the first addition of sulfur was made. The wine was removed from the coarse yeast at the end of November and bottled in December 2023.
