Culinary recommendation
Its origins predestine Rock Angel as an accompaniment to Mediterranean dishes and charcuterie. You should always remember that the structure and minerality of Rock Angel are more concise than in Whispering Angel. A favorite companion for seafood and shellfish, particularly oysters.
Vinification
100% fermented in stainless steel tanks. Maintained constant temperature for fermentation at 14 °C and “bâtonnage” of the yeast mixture. Aging in a tank on the yeast for three to four months.
