Culinary recommendation
Goes well with cheese (white mold, brie), fried guinea fowl with thyme jus, roast roast veal with cream morel sauce and mushroom risotto with parmesan.
Vinification
Within the magnificent “Morgeot” climate, the red Premier Cru cuvée is made from the “Guerchère” and “Ez-Crottes” plots. The area is divided into two parts. The lower part consists of fine sand and silt with soil depths of up to 80 cm. The upper part consists of marl with thin limestone banks and finer soil depths (40 cm). The name “Morgeot” is said to be derived from the Gallic “Morga” which means “border” or “limit.” The nearby Abbey of Morgeot may have historically been the border between the “Beaunois” and “Chalonnais” areas.
