Made with uncomplicated (not easy) winemaking techniques, this is an athletic, chiselled and precise wine. It comprises the very mature flavors of salinity, saltiness and minerality, which all characterize the world's great and classic white wines. As usual with the production of Ataraxia Chardonnay, a minimalistic, non-interventionist approach was taken to winemaking, aimed at reflecting the sense of place and expression of the terroir. This wine is 100% fermented in barrels and carefully aged in specially selected small French oak barriques, which are obtained exclusively from Burgundian coopers. During the 10-month maturation period, batonnage was used fortnightly.
