Tasting note
Intense straw yellow, which is interspersed with green and golden nuances. The initially spicy smell opens up into an overflowing fragrance with floral and fruity notes. Elderberry, white peach, loquat, almond and hazelnut. The taste is silky, velvety and flattering, supported by the fresh acidity and sweet spice of the wood. The finale impresses with its extreme length and gives the taster the special characteristics of the terroir.
Culinary recommendation
Goes well with spicy fish, vegetables, white meats and cheese. But also with fried foods and especially with mushroom dishes.
Vinification
After pressing and gently pressing, the must is cooled to 10°C so that it clarifies naturally. The first part of the alcoholic fermentation takes place in stainless steel tanks, where the temperature is always kept below 15°C. The must, which is undergoing fermentation, is finally transferred to barriques, where it completes the fermentation. After fermentation, the wine is stored on lees in French oak barriques for around 8 months.
