Tasting note
The bouquet is elegant, characterized by ripe, yellow fruits such as quince, peach and mango, on the palate an exciting interplay between minerality and juiciness on the one hand, and freshness and fruitiness on the other. A “vin de gard” that is a wonderful addition to a champagne menu.
Culinary recommendation
A unique champagne for special occasions as an aperitif or with sumptuous dishes such as hot oysters, lobster and caviar.
Vinification
A compelling idea borrowed from the solera process of sherry from Andalusia. Jerome began to produce a “vin de réserve” from the best part of his harvest after aging in barriques. Each year, he extracts a third of it and creates the trio “S” from it. At the same time, he then replenishes the quantity withdrawn with the new vintage. With this process, Jerome is building on the building blocks of his wine library, because every new bottling of the trio “S” documents the sum of the vintages and the work on the estate in more and more parts. The “trio” in the name stands for the triumvirate of the blend of Pinot Noir, Chardonnay and Pinot Meunier — the “S” for the Solera system. The current bottling consists of eleven volumes.
