We have a special, dominant sparkling wine for you, which is a source of enthusiasm among many wine connoisseurs. The winemaker from the French winery Philipponnat greets us with this wine, which he grows in the Champagne countryside. Tasting note
Spicy and fruitiness balance wonderfully intensively on the palate, supported by a lively, powerful mousse. The fine perlage and golden yellow robe are pleasing to the eye. Its fragrance ranges from butter-almond pastries, blackcurrant jelly and apple tart to jasmine, candied orange and apricot. No severe tartness in the mouth, but a richness of taste with ripe fruit notes and mineral accents, which lingers on for a long time in the finish.
Culinary recommendation
Our recommendation: The perfect drinking temperature for the sparkling wine is a slightly chilled 10°-12°C. Flaschenpost team recommends this Champagne Philipponnat brut for aperitifs, crustaceans and oysters.
Vinification
The grapes are picked by hand, carefully pressed and the must is fermented in stainless steel tanks. One part is aged in stainless steel tanks, the other in wooden barrels. The final blend consists of 25 to 40% reserve wine, aged and preserved in a solera-like system. Sugar and yeast are added to the bottled wine to start the second fermentation (bottle fermentation). The subsequent maturation on the lees takes around 3 years, well beyond the legal minimum of 15 months. After disgorging (removal of the yeast deposit), the finished champagne receives a moderate dosage (8 g/l). The date of disgorging is noted on the back label.
