About the wine
Graceful and fertile landscapes of the coastal region give us these grapes, from which the winemaker from the South African winery Chamonix conjures up this white wine with refinement and sensitivity. This strong white wine 2015 — Chamonix Chardonnay Reserve is a hit right down to the last drop in the truest sense of the word! Tasting note
The wine has a bright straw yellow color with golden reflections and an exquisite aroma with scents reminiscent of tropical fruits, ginger, spices and oatmeal. Well-structured and mineral with aromas of lime and roasted almonds on the palate. Premium drinking starts at 3-4 years, although top vintages remain impressive for up to 10 years. The wine shows bright straw yellow colors with golden reflections and rich aromas in scents reminiscent of tropical fruits and grapefruits, mixed with hints of oatmeal, caramel and nutmeg. Medium-bodied with rich fruit aromas.
Culinary recommendation
Perfect with goat cheese, poultry and soft cheeses.
Vinification
The harvested grapes are destemmed, gently crushed and cold macerated for 6 hours. The natural, spontaneous fermentation takes place in 225l French Allier barriques, which takes up to 3 weeks. The wine remains on the yeast, where it undergoes malolactic fermentation, with the yeast being stirred periodically through the wine, known as batonnage. The Chardonnay Reserve is stored in barrels for 14 months and aged for 20% in Noblot eggs. Only the best barrels are considered for the final mix.
