Tasting note
This Chablis comes in a brilliant golden yellow. The nose is dominated by aromas of lemon verbena, orange zest, pome fruit, nutmeg and light toast notes. On the palate, the wine is concentrated, precise and full-bodied, with a playful acidity, a hint of bitter lemon and a long-lasting, slightly salty finish. A delicious Chablis with lots of energy and a perfect balance.
Culinary recommendation
Goes well with fish and seafood, poultry, cheese.
Vinification
The Grand-Cru location Bougros is the westernmost Grand-Cru location in Chablis and has a south-east orientation. The location produces powerful and expressive Chablis wines, particularly due to the perfect sun exposure. Since 2012, the Lavantureux family has been able to buy grapes from a small 0.55 hectare plot of a friendly winemaker. After manual harvesting, the temperature-controlled fermentation takes place in steel tanks. 20% of the 14-month aging takes place in steel tanks and 80% in oak barrels (new up to 3 years).
