Vinification
The grapes are harvested by hand to preserve the quality of the fruit. The grapes are sorted manually on a vibrating sorting table so that only the healthiest fruits are processed. The must is gently drained before it is gently extracted with a pneumatic press in order to preserve as much aroma as possible. Static cold deposition of musts in stainless steel containers for 12 to 24 hours to obtain a bright, clear juice. Alcoholic fermentation and malolactic fermentation take place spontaneously in stainless steel tanks. Aging for 16 months in stainless steel tanks, 10% is aged for 16 months in barriques. This enhancement preserves freshness and minerality, which can be paired with complexity and body fullness. The wine is transferred twice before being bottled at the end of autumn.
