About the wine
The winemaker from the South African winery Cederberg greets us with this wine, which he grows in the countryside. Tasting note
This cool-climate Chenin Blanc delivers a refreshing, mouth-filling wine that pops out of the glass with green melon, sliced Granny Smith apple, juicy pear, granadilla (passion fruit) and fresh herbs. Wonderfully refreshing on the palate with all the fruit nuances kept in check by classic chenin acid, this wine glides away weightlessly and makes it so easy to grab another sip.
Culinary recommendation
The wine goes very well with chicken curry, salads with citrus fruits or a citrus dressing, and a Greek salad. But it also goes very well with fresh goat cheese, feta or mozzarella.
Vinification
The grapes are harvested by hand early in the morning at 20-23.5 Oechsle. Winemaking takes place under reductive conditions using dry ice and carbon dioxide gas. The grapes are crushed, left on the skin for 5-8 hours and then gently pressed. The juice was settled for 2 days, then cut off and fermented with selected yeast strains at 11° C. for 24 days. After fermentation, the wine aged on fine lees for a further 4 months before being bottled.
