About the wine
The Casa de la Ermita family winery was founded in 1999 in the heart of the Sierra del Carche Valley, a national park in the Jumilla wine region, south of Valencia. I come from north-facing vineyards at an altitude of 700 meters in the Sierra del Carche Valley.

Tasting note
On the nose, intense aromas of ripe black fruits such as blackberries and plums develop, accompanied by Mediterranean herbs such as thyme and rosemary, mineral and roasted notes, fine cedarwood, spices such as cloves and cinnamon, and cocoa. On the palate, I am juicy and well-structured, with a distinct presence of dried black fruits. My ripe tannins are harmoniously integrated.
Culinary recommendation
Goes well with grilled eggplants with miso and mushrooms, or with lamb racks with pomegranate glaze. I'm also very happy with some hard cheese or must rolls.
Vinification
I owe my spicy notes and silky tannin structure to 6 months in French and American oak barrels. Because the time spent in the barrels makes me softer and rounder, with delicious pepper and cocoa notes.
