About the wine
If we can offer something special for Christmas 2021, it's this powerful Touriga Franca 2017 CARM CM DOC. With experience and intuition, the winemaker from the Portuguese winery Carm masters this red wine in the sunny and blooming landscape of the Douro Valley. Flaschenpöstler culinary tip: This Touriga Franca is excellent to serve with barbecues or grilled vegetables.
Tasting note
Extraordinary aromas, very fresh nose with a predominance of wild black fruits. Balance between seductive nuances of licorice and a complex aroma with notes of wood. On the palate, it is hot and concentrated, with firm tannins and a smooth texture. The aftertaste is very intense and persistent.
Culinary recommendation
Cheese, meat and most Mediterranean dishes.
Vinification
After the grapes have arrived at the winery, the grapes that are not in perfect condition are smoothed. The grapes are then vinified under complete destemming, gentle pressing and thermal shock, followed by a period of cold pre-fermentation in the wine press for around 12 to 24 hours. The must is transferred to wide and low-fermented tanks, where the wines ferment for around 10 days at temperatures between 24 and 26°C. The malolactic fermentation took place naturally and will be completed at the end of December. Part of the fermentation process was carried out in oak barrels.
