Carlo Santi 1843 is an Amarone who honors the founding of this winery by taking over the name of its founder and the year in which it began operations. This wine is produced only from the best vintages in limited and numbered quantities to represent all the excellence of Valpolicella's winemaking tradition.

Tasting note
Very engaging, complex and intense, with notes of red berries, plum, blackcurrant jam and ripe blueberries, followed by hints of orange peel, tea leaves, hazelnuts and dry pastries. Round, velvety but also vibrating start thanks to tannins and a present but pleasant acidity, followed by a center of the palate that is reminiscent of the scents of the nose. Harmonious and tasty finish with a nice length. Dark red with ruby red shimmer.
Culinary recommendation
Goes well with Bistecca alla Fiorentina, Brasato, Grillladen, Entrecôte Café de Paris, wild boar, venison, ripe cheeses such as Emmentaler, Gruyere, Sprinz, Parmesan.
Vinification
The grapes for Amarone “Carlo Santi” are dried in a special area of the winery called Fruttaio, which can accommodate more than 30,000 baskets during the four-month drying phase (called “appassimento”). Santi is one of the very few wineries in Valpolicella that has a fruit taeo within its cellar, which allows it direct control during the drying phase. This place also promotes the internal circulation of the indigenous yeasts present on the grapes, which will trigger alcoholic fermentation. The long fermentation (over 50 days) in wooden barrels with an average capacity of 25 hl involves a long cold maceration before fermentation to best extract the floral and aromatic complexity of the grapes. The aging in oak barrels takes at least five years. Before marketing, the wine is left in the bottle for over a year, as this additional refinement period is very important.
