About the wine
Tenute Olianas is located in the heart of Sardinia. More specifically, in Sarcidano, a plateau in central Sardinia. 60 km north of Cagliari, 65 km east of Oristano, on the southern border of the province of Nuoro. The estate covers over 20 ha, of which 16 ha are planted with vineyards. Tenute Olianas offers bio-integral and therefore dispenses with the use of artificial fertilisers and synthetic products.

Tasting note
Intense ruby red color. Smells very fruity and floral. The taste is fresh and well-structured. Distinctive notes of wild fruits are cleverly mixed with nuances of dark chocolate and tobacco. Soft tannins on the finish and a concentration balanced by a pleasant acidity. Typical Sardinian flavor. This wine is fully ripe for drinking up to 5 years after the grape harvest.
Culinary recommendation
This young, fresh, round and lively wine is ideal for starters with fish or white meat. It also goes very well with Italian antipasti. Should be drunk rather cold. 18°C in winter - 14°/16°C in summer.
Vinification
The destemming is followed by pressing the berries gently. 30% of the must obtained is grown on amphorae, in which further maceration takes place on the skins for 20-25 days thanks to the naturally controlled temperatures and the small quantities to be vinified. The remaining 70% ferment in steel tanks at a controlled temperature. Fermentation is carried out using the BIOINTEGRALE approach, i.e. without the use of enzymes or pure yeast. The wine ages for about 8 months partly in French oak barrels in the second and third rounds and partly in steel tanks. After a small addition of sulphites, the wine is finally bottled. This wine is neither clarified nor passed in order to preserve its natural character as much as possible. Any leftovers are a sign of integrity.
