About the wine
The winemaker from the Italian winery Azienda Agricola Stefano Berti is absolutely proficient in his craft. Elegance and finesse are the characteristics of this red wine, which originates in the fertile and flourishing countryside of Emilia-Romagna. We have a special, biting Sangiovese from 2012 for you, which is enthralling many wine connoisseurs. The Flaschenpöstler promise a culinary experience when you serve this Sangiovese with lamb or beef.

Tasting note
The color of calistos is a dense ruby red. The bouquet is multi-faceted, with notes of ripe fruit and dark berries supported by a balsamic component. The taste of calisto is a typical Sangiovese, straight, with rich fruit on present but well-integrated tannin.
Culinary recommendation
It goes well with braised beef, oven-baked lamb or game dishes such as deer or wild boar. It is also a perfect accompaniment to ripe pecorino or tagliatelle with mushroom ragout.
Vinification
Mash fermentation takes place at approx. 28°C without the addition of pure yeast and takes around 3 weeks. The wine is then aged for one year in Allier barriques, which are in a maximum second coating.
