The Simonsberg appellation is called Cabernet Country and with good reason! Cabernet has been grown here for over 300 years and produces classic, elegant examples of the grape variety. Notes of cassis, tobacco leaves and Moroccan mint. In den Weinreben Cabernet Sauvignon is a balanced, evenly growing vine with compact berries and high stress resistance. This winter hardiness gives us space to trigger stress at certain points in the growth cycle through irrigation with leaf and stem water potential. We regularly measure the water stress level of the vines and only irrigate it when this is necessary to achieve an optimal water tension profile during maturation. This method saves water and results in wines with concentrated aromas. The wine in our Cabernet Sauvignon grape varieties is rarely lacking in color or structure, so that a whiff touches the cornerstone of our wine cellar practice. We aim for easy extraction by gently pouring the juice over the peels twice a day during fermentation. This wine ages for 18 months in 225l French oak barrels. South Africa can be defined as a New World wine producer, but this may be a misconception: Our vineyards are planted on some of the oldest soils in the world. The decomposed granite soils that define our vineyards give this wine an earthy, cool and unmistakable Old World character. We taste black fruit, cedar and a touch of spice. This wine should age elegantly and be more refined by at least 2025.
