About the wine
In 1978, Swiss entrepreneur Donald Hess bought the winery in California. Organic viticulture played a major role right from the start. Instead of spraying weedkillers, goats are allowed to graze between the vines. The estate also houses the large Hess art collection.

Tasting note
Of a dark red color. The bouquet contains ripe raspberries, black cherries and black currants. Very strong aroma of ripe red fruits. Velvety, elegant and berry aromas even on the finish.
Culinary recommendation
Goes well with white meats, poultry
Vinification
The majority of Cabernet Sauvignon grapes come from Pope Valley. The grapes are fermented exclusively in stainless steel tanks. 85% of the wine is aged in French oak barrels (25% new, 75% used) for 12 months.
