Tasting note
On the nose, a combination of fruit and roasted aromas, fine red berries and cherries, plus spicy notes. On Gauemn, the Clos de la Mousse offers a delicate, velvety start. The tannins are present but fine and testify to the high ripeness of the grapes. The complex finale is a revelation, with a resurgence of wild fruit aromas, smoothness and a saline note (due to the marl soils), which leave a mineral, long-lasting finish.
Culinary recommendation
Goes well with all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
After careful handpicking, the grapes go through cold maceration before fermentation begins. The alcoholic fermentation takes 10 to 15 days, during which 20 to 30% of whole grapes are also fermented before the mash is pressed and the young wine is moved to barrique aging. The aging in barriques takes 16 to 20 months.
