Tasting note
On the nose, scent of sour cherries and berry compote with balsamic notes, eucalyptus and dry herbs. On the palate for Pinot Noir, quite complex structure and lots of freshness, elegant, precise acidity, fine-grained tannins. Very mineral with a long aroma
Culinary recommendation
Goes well with Asian cuisine, grill BBQ, stew.
Vinification
This Pinot Noir comes from a 500 meter high boiler location. It is surrounded by forest and rests on limestone soils with iron-rich clay, which gives the wine beautiful minerality. Spontaneously fermented, matures in used 225 liter barrels for 20 months.
