Tasting note
Light straw yellow with golden reflections. Elegant and complex, with notes of green apple, citrus and nuances of white flowers. The nose shows slight hints of bread crust, fresh almonds and a touch of minerality. Dry and fresh, with a fine and persistent perlage. Intense on the palate, with a perfect balance between vibrating acidity and mineral structure. Delicate notes of ripe fruit are noticeable, accompanied by a spicy and long-lasting finish that leaves a pleasant and clean feeling.
Culinary recommendation
Goes well with raw fish dishes such as oysters and tuna tartare, as well as white fish carpaccio. It also goes well with seafood dishes and fresh cheeses such as goat cheese and robiola.
Vinification
The grapes are harvested by hand and gently pressed to preserve the characteristics of Chardonnay. Fermentation takes place at a controlled temperature and the aging on the yeast takes at least 36 months using the classic method to develop complexity and depth of taste.
