Tasting note
The Noble Hill Blanc de Blanc s shows a delicate variety of aromas and flavors. Fruit notes include melon, pineapple and hibiscus flower. Mineral notes trigger a flint covered with moss. The structure of wine is linear with racy acidity, which is balanced by rich fruits. The bubbles are elegant and finely shaped, with just enough fizz to start a celebration for any occasion. The Blanc de Blanc s 2017 is a natural brut; no sugar is added during dégorgement!
Culinary recommendation
It goes well with fresh seafood such as oysters or prawns, but also goes well with sushi, goat cheese or vegetarian dishes with herbs and green asparagus. It is also an elegant accompaniment to white poultry such as lemon chicken or fried turkey breast.
Vinification
The grapes for our Blanc de Blanc s come from a single hectare of Chardonnay, which grows directly behind our cellar in decomposed granite soil. The Chardonnay clone planted here comes from Champagne and is therefore ideal for making traditional sparkling wine (Méthode Cap Classique in South Africa).
