Tasting note
The Bisou Piemonte Viognier 2021 impresses with an intense bouquet with aromas of ripe peaches, honeydew melon and delicate floral notes. On the palate, it is full and juicy, with lively acidity that makes the wine fresh and balanced. A fine minerality gives the wine depth, while a long, fresh finish rounds off the taste.
Culinary recommendation
Goes well with grilled fish, lobster, or creamy pasta dishes. It also goes great with mild cheeses such as brie or goat cheese.
Vinification
Bisou is made entirely from Viognier grapes selected in the upper and sunny areas of the hill, resulting in a high concentration of sugar and terpenes, which give a stylistic direction reminiscent of Condrieu. (Area of origin of this variety). The vinification takes place at around 15°C after gently pressing the grapes; one third of the wine is fermented in new barrels and two thirds in steel tanks. After fermentation, the wine remains here for at least 12 months to mature on fine yeast, followed by assembly and aging in the bottle for 18 months.
