Tasting note
The Ernie Els The Big Easy Cabernet Sauvignon exudes a classic bouquet of red berry fruit, a fragrant cigar box, dried herbs, black cherries and ripe plums, paired with the freshness of red cherries. On the palate, this elegant wine delights with an invitingly fresh start, youthful vigour and lively red fruit with earthy undertones. The firm tannin and a dash of Cinsault (15%) make for a medium-bodied wine with a fresh crystalline character. With further development in the glass, this Cabernet Sauvignon presents itself with an attractive tension between red and black fruit and hints of fine licorice in the focused and dry finish.

Goes well with pasta and pizza.
Vinification
Cabernet Sauvignon comes from the Helderberg region within the Stellenbosch appellation. In addition, selected plots were sourced from various coastal regions such as Paarl and Robertson to complement the style. The Cinsault grapes come from a special vineyard planted with 26-year-old bush vines in the Perdeberg region. The grapes were harvested by hand in the cool early morning. On the sorting table, all excess stalks and low-quality berries were removed. Fermentation took place in 7-ton open stainless steel tanks, and the mash was pumped around three to five times per day or pierced by hand to ensure maximum removal of paint from the skins. Each grape variety is aged separately in oak barrels before the wines are finally blended and bottled.
