Bibi is made from Gamay and Mondeuse grapes, which grow on clay and calcareous soils. The vines are between 18 and 47 years old and have a density of 7,000 vines per hectare. It has a fairly intense color with reddish brown and mauve reflections. First, a whiff of smoke comes through the scent, but after decanting, there is a sophisticated expression with rustic notes, where the juicy youthfulness of the fruit is surrounded by peppery and rustic notes: sausages and soot, rose, strawberry and sour cherry, pepper and paprika, chicory and herb. On the palate, freshness and vitality merge to create a lively picture, to which the juicy spiciness of the aromas and the powerful substance contribute.
