Tasting note
The Biberius is an intense ruby red with distinct shades of purple. On the nose, it develops an intense fruit aroma that is reminiscent of sour cherries, accompanied by delicate vanilla notes. On the palate, it has a full, long-lasting body, which is accompanied by clear but not aggressive tannin. The aftertaste is characterized by small red fruits.
Culinary recommendation
Ripe cheeses, sausages and rich pasta dishes, as well as roast beef or braised meat dishes.
Vinification
Mash fermentation takes place on the trays in temperature-controlled stainless steel tanks for at least 15 days. The wine is then aged in stainless steel tanks for at least 12 months, followed by a few months of bottle aging.
