Tasting note
This classic Bordeaux blend with deep ruby reflections initially exudes aromas of raspberries and thyme, which develop into subtle cinnamon and tobacco notes through careful aging in oak wood. On the palate, there are fascinating aromas of plums, cassis and black cherries, which are harmoniously combined by a firm yet sophisticated and velvety texture.
Culinary recommendation
Perfect with fennel crust sirloin, celery puree, potato fudge, hazelnut beurre noisette and a fig-red wine jus.
Vinification
The fermentation took place in stainless steel tanks, with extended maceration of the skins and regular pumping to gently extract color and aroma. Malolactic fermentation then took place from selected tanks in new French oak and the rest in stainless steel tanks, followed by aging in barrels. The aging took 18 months in 225 liter French oak barrels, of which 43% consisted of new wood, 45% from the second coating and the rest from the third coating.
