Tasting note
The aromas of Barolo DOCG Riserva express a lot of complexity with a very special structure. The floral nuances of roses and cherries then show their own character. A fruity red wine with a strong body and outstanding acidity, which develops its complex structure strongly with rich tannins on the tongue and on the palate.
Culinary recommendation
Goes well with red meat, game and braised beef dishes. Ideal for haute cuisine dishes due to its tannic component, which refreshes the mouth.
Vinification
The grapes are gently pressed and the stalks removed. The clear must ferments in stainless steel barrels at a controlled temperature. After tapping, the new wine is filled partly in 25 and 30 hl Slavonian oak barrels and partly in 225 liter Allier barriques, for a total of 20-24 months.
