About the wine
With the strong Chardonnay 2020 — Aupiho Blanc, nuances and accents are redefined. The winemaker from the French winery Domaine Fontchêne is absolutely proficient in his craft. Style and finesse are the characteristics of this white wine, which originates in the magnificent and sunny countryside of Provence. Tasting note
Complex aromas of quince, dried apricot and lime blossom develop on the nose. On the palate, the wine is round and full-bodied with notes of dried fruit, floral freshness and a fine spiciness. The aftertaste is long and elegant with a pleasant tension and notes of yellow fruit and citrus.
Culinary recommendation
A “Feels Like in Heaven” wine that goes well with grilled fish, pan-fried scampi and medium-aged cheese.
Vinification
The grapes are harvested by hand in 15 kg crates and pressed as whole grapes. After a natural pre-clarification at around 10 °C, the alcoholic fermentation of each grape variety takes place separately in 225 liter barrels at temperatures between 18 °C and 20 °C. The wine is then aged for 12 months on fine yeast with occasional stirring (bâtonnage) to promote complexity, fullness and fruit.
