Tasting note
The grapes from the Auener vineyards are slowly pressed after a short period of time and fermented to 60% in wood and 40% in stainless steel. It ripens for 7 months on the yeast, which is stirred from time to time (batonage), which provides more depth and melting. It is invigoratingly fresh and crisp, with great aging potential.

Goes well with sushi and apero
Vinification
Selective manual harvesting, gentle pressing, fermentation in stainless steel tanks at controlled temperature to preserve freshness and clarity. Aging on fine yeast to refine the texture and give the wine more depth — deliberately without the influence of wood for a clear, elegant style.
