About the wine

Fabrizio and Mario Ragnedda were already aware of the potential of the Vermentino grape in the 1980s. With innovative techniques, they set new standards and quickly became one of Vermentino's leading producers. They were also the first in the world to vinify this grape variety in wooden barrels.

Tasting note
Deep ruby red with a dense and aromatic nose of dark wild berries, cherries, spices, cocoa and some herbs. On the palate, the Assajé is full-bodied, with concentrated, ripe fruit and soft tannins. The long-lasting finish is characterized by lots of berry fruit and fine spicy notes.
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Assajé Capichera Isola dei Nuraghi IGT harmoniert hervorragend mit kräftigem Lammragout, rotem Fleisch und Ente. Unsere Empfehlung: Geniessen Sie diesen Rotwein bei leicht gekühlten 16°-19°C. Im folgenden Zeitraum liegt die empfohlene Genussphase dieses Weins: 5 bis 8 Jahre.
Vinification
After manual harvesting, the selected grapes are gently pressed and then fermented in temperature-controlled stainless steel tanks for approx. three weeks. This is followed by the 12-month expansion of 50% in temperature-controlled stainless steel tanks and 50% in concrete tanks.
