Vinification
The winery uses vacuum distillation, one of the most common and respected techniques for dealcoholizing wines. This method gently removes the alcohol by lowering the boiling point under vacuum so that the fine flavors and aromas of the wine are retained. The process takes place at 25-30°C over 5-6 hours. After dealcoholization, carbonic acid (CO2) is added to the wine again so that the wine remains sparkling.
