Tasting note
Deep ruby red color with great intensity. Strong aromas of small dark fruits, spices and vanilla on the nose. Dry palate with well-structured tannins and a full body. Complex aromas of aging, coffee and dark chocolate accompany the fruity and spicy character. The aftertaste is long, complex and impressive.

Vinification
The grapes are hand-picked and sorted on a conveyor belt before crushing. Soak cold at 8 - 10°C for two days before fermentation. Alcoholic fermentation over a period of 15 to 20 days at controlled temperatures of no more than 25°C Traditional red wine making in open oak barrels (50 hl); This traditional “Mount Athos Vinification Technique” provides the grape must with enough oxygen for fermentation and gives it a rich aroma and a soft taste that is enhanced by aging malolactic fermentation in open oak barrels. The final blend is made five months after harvest and the last bottling takes place about six months later. The wine is filtered very easily. The maturation takes place 16 months in oak barrels 300lt. The barrels are 100% French oak (50% first filling - 50% second and third filling) .Further storage in bottle for at least 12 months before release.
